Quinoa Stuffed Portobello Mushrooms

Hi, hope everyone's having a great week. Jordan and I came up with this supper yummy recipe, and we wanted to share it with you! It doesn't take very long to make.

Ingredients:

4 Portobello mushrooms cut out inside and save for stir fry
1 1/4 C Quinoa
1 small purple onion diced
3 garlic cloves chopped
2 sprigs Rosemary
2 Tb ketchup
Best of the west natural oak lump charcoal -(food max has it and it added superior flavor)

Directions:
Cook quinoa according to package
Separately saute onion, garlic, inside of mushroom in olive oil. Add salt and pepper to taste.
Once caramelized add ketchup and quinoa and stir.
 After you cut out inside of mushrooms marinate with a little olive oil, onion powder,  dried cilantro leaves, and chicken seasoning of your choice.
Grill mushrooms for 5 minutes until brown on bottom.
Then just put mushrooms on plate and fill with quinoa mix and top with Parmesan (optional).
